Everything around you shines as a heavenly gift for just your eyes to see…here is the thing though, when you see it- acknowledge it and give thanksgiving. Then and only then will you see so much more. Abundant thinking takes practise- it is literally magical. It is in fact spiritually speaking the appreciation of life in its fullness with joy. To embrace abundance is the cultivation of respect for the creative energy of the universe.
Abundance isn’t what you have, abundance is a mindset. For nobody really owns anything. You see that truth when someone sadly passes. My late neighbours home filled with all those goods and memories took a mere two days to smash down to a flat block of land.
I try to be grateful for the abundance of the blessings that I have; for the journey that I am on and relish each day as gift.
Here is my abundant lunch today- a hustle from just a few things in the fridge and the pantry. It is the simple things that demand gratitude.
Abundance is about being rich, with or without money.

Beetroot Quinoa Salad
For me less is more re quinoa in a salad. I find it a bit heavy and bitter when too dense. It tastes great with just a light sprinkle to add fibre and protein that makes this recipe quite substantial.
1/4 cooked quinoa
3 cups spinach and baby kale leaves
3 boiled beets, sliced
1/2 avocado, sliced
2 stalks celery, sliced
large dollop of chilli hummus
Mustard Dressing
2 Tbsp white vinegar
1 heaped tsp mustard
slug of extra virgin olive oil
salt and pepper
Layer the vegetables in a large serving bowl and sprinkle with the quinoa. Dollop with the hummus. Whisk the dressing ingredients together and drizzle to serve.
Pumpkin Ravioli with Garlic Walnut Butter
1 pack of fresh pumpkin ravioli
80g butter
salt
3 cloves garlic, chopped
1/3 cup walnuts roughly chopped
parmesan cheese to serve
Bring the pasta to boil and drain when aldente. Heat the butter in a small saucepan with a pinch of salt until it just begins to colour. Add the garlic and walnuts and cook for a minute. Pour quickly over the pasta and top with the cheese.
